Butterscotch Pecan Cookies

  • 1 cup reduced fat Bisquick baking mix
  • 1 package sugar free butterscotch pudding mix
  • 1/3 cup butter, melted
  • 1 egg (or egg substitute equivalent)
  • 1/3 cup chopped pecans
  • 1/3 cup butterscotch chips

In a medium bowl, mix baking mix, pudding, butter and egg until well blended. Mix in pecans and butterscotch chips. Drop by tablespoonful about 2 inches apart onto a greased baking sheet. Flatten with the bottom of a glass. Bake at 350* for 8-10 minutes (mine took about 15 minutes on my baking stone!) or until edges begin to brown.
