Brown Sugar Pork Loin in the Crockpot

  • 3 1/2 pound pork loin (or any size)
  • 1 Tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 1 1/3 cups unpacked brown sugar, divided
  • 1 Tablespoon ground mustard
  • 1 Tablespoon apple cider vinegar
  • 1 Tablespoon ground cinnamon

Wash, dry, and trim excess fat from meat. Rub with garlic (could use half cloves “real” garlic). Sprinkle with salt and pepper. Poke holes all over with skewer or fork. Mix 1 cup brown sugar, vinegar and mustard. Rub all over meat and place in crockpot. Cook on low for 7-9 hours. Remove meat from crock, drain excess liquid, replace meat. Mix remaining brown sugar and cinnamon and place on top of meat. Cook on low for 1 additional hour.


*Using this size meat and cutting into 12 servings is about 7 weight watchers points.
