I was up all night with a sick hubby, and now I’m not feeling so great myself! Fever, headache, bellyache. Yuck. It’s 1 o’clock and so far I’ve eaten a plain bagel….with nothing on it. Nothing glamorous, nothing to post. Hopefully I will be feeling better tomorrow. Now, I think I will be going home to lay on the couch (unless it’s already occupied by hubby who went home sick about 2 hours ago.)

New Spin on Zucchini

I don’t love meat. Most days I can honestly say I don’t like meat, but sometimes I have a craving for a cheeseburger! In our home, I have a hard time coming up with dinner ideas because hubby is strickly a meat and potatoes kind of guy…He really doesn’t even like pasta (the horror!!!).

Since I don’t care to have meat, I have started to question why I feel the need to eat it every night for dinner when I could make myself a vegetarian dish while I am making hubby’s meat dish. The plus side, he will have extra leftovers for lunch the next day! I have done this for two nights now, and I can’t say that it has been all that hard. Yes, I did use an extra pan on the stovetop, but that’s not a biggie. As of now (Wednesday morning) I haven’t eaten any meat since Sunday dinner and I don’t miss it a bit! I am having lots of fun looking up recipes using beans and lentils….can’t wait to try them!!

Anyways, I had a zucchini that needed to be used up, so I came up with this idea for a sandwich. I made the same thing for hubby, but used pre-cooked meatballs instead of zucchini. These were so simple and very delicious!!!!

Zucchini Grinder

1 tablespoon olive oil
1 large zucchini
salt and pepper to taste
1 teaspoon minced garlic
1 small can of mushrooms (or fresh)
1 cup marinara sauce
1 1/2 cups shredded reduced fat mozzarella cheese
4 whole wheat mini sub buns

Preheat oven to 350*. Heat oil and garlic in a skillet over medium heat. Add zucchini and mushrooms, and cook until zucchini is slightly tender. Season with salt and pepper (or other seasonings of you liking), and stir in the marinara sauce. Cook and stir until the sauce it heated.

Line a 9×12 baking pan with foil. Open up sub buns and place on foil. Sprinkle a little bit of mozzarella in the bottom of each bun. Spoon a generous amount of zucchini mixture into each bun. Top with a handful of cheese. Cover pan loosley with foil. Bake for 15 minutes, until bread is heated through and cheese is melted.

***I did two seperate pans of sauce, one with zucchini and one with partially thawed, pre-cooked meatballs. I also baked them a little bit longer, just to make sure the meatballs were nice and hot. You could also wrap these individually in foil to bake, but I thought the cheese might stick to everything!

It’s Only Tuesday?!

I have felt like I am running behind all day….It doesn’t help that I have had two puppies at home with upset tummies since I got home from work yesterday. Yuck. At least we don’t have any carpet, so cleanup is easy (sorry if that’s TMI). I really didn’t want to leave them home today, but I really couldn’t justify calling into work for sick dogs, so my baby sister is going to check in on them during the day.

Dinner last night was totally off plan. I was starving when I got home so I munched on some nuts, but then I wasn’t hungry for my kidney bean burger! I ate about half and a plum. Then I laid on the couch the rest of the night with a terrible headache! I feel better now, but I didn’t want to do ANYTHING last night!

Breakfast was a little backwards today, due to some things going on at work. (It has been a CRAZY day!) First off I had a banana, then about 1 1/2 hours later I had my standard blueberry pie oatmeal. I think this system might work to my advantage with a run at lunch!



I also did not get my normal Diet Coke this morning. I figured if I was running I should get some H2O in me beforehand. I can’t tell you how badly I wanted to crack open that bottle of pop this morning! ….I guess that’s a sign of an addiction! 😉

Before digging into my cool, new lunchbox for lunch, I had a 1.75 mile run on the training schedule. I managed to pound out 1.8 miles with two small walk breaks in there.  I didn’t go very fast, just under an 11 minute mile pace overall, but considering it has been WEEKS since I have done much running, I was happy to get out there!


Today for lunch, I was inspired by a sandwich that I saw Meghann make. It is an Arnold Thin with reduced fat peanut butter, dried cranberries and a fresh, white peach. I also had corn on the cob and a dino egg plum.



Snack was a Carrot Cake Clif Bar. This is a little bit more calorie dense than I like for an afternoon snack, but I was starving all afternoon!


 I may have to refigure my lunchtime meal if I am going to continue with my runs during that time.

Does anyone else run during their lunch? If so, do you eat a bigger meal for lunch and a smaller one for dinner? How do you combat the mid-afternoon starvation? (Or am I the only one that gets that?)

Doing Pretty Good

Another weekend flew by! I did fairly well keeping track of my eats this weekend, and I have been using my handy dandy points tracker spreadsheet….I can do this!

This weekend we had a party for August birthdays on hubby’s side of the family, but I made a yummy, healthy pasta salad to take and I ate mostly that! We did get a pizza Saturday night, but I just used up my 35 “weekly” points on that. I just need to stay in the “groove” of counting points (or at least making an effort to eat healthy/be aware of points values!).

I also had two pesky puppies that would not get out of my car (which is incredibly dirty, thanks to living on a dirt road!) on Saturday. I had the door open and they jumped right in and wouldn’t get out….not even for treats or peanut butter filled pretzels! I finally gave up and left the doors open and went in the house. About 45 minutes later, they decided it was time to come in.


Today, in addition to tracking my eats, I did day one of my “new” running plan. I combined a few 5k, 10k, and 1/2 marathon plans to make one big timeline to get me through until May and TORONTO! I know that’s planning a long ways out, but if I have the spreadsheet hanging up and can cross off days, I am more likely to stick with it. My biggest concern is the upcoming winter months. Winter here in Central Michigan can be brutal. If anyone has any cold/snowy/icy weather training tips to pass along, I would really appreciate it!!! I may be able to borrow my parents treadmill for the winter, but I would still like to go outside as much as possible.

Onto today’s eats! I was very excited to pack my lunch today because my mom got me a new Built NY lunchbox!!!


Breakfast was blueberry pie oats


Snack was a white peach and a apple pie Larabar



Lunch was some leftover pasta salad (I need to remember to bring that recipe with me and post it!), a veggie burger with salsa, a cucumber half, and a dino egg plum.



Snack was a cranberry orange Gnu bar and a few (unpictured, but points counted!) peanut M&M’s.


Tonight for dinner I will be having a kidney bean burger on an Arnold Thin bun, corn on the cob, and some fruit.

Day one of the master running plan was “Walk 30-60 minutes”. Talk about specific….not so much! I headed out at lunch did a brisk 41 minute walk. At one point I probably jogged about a 1/2 mile of that, just because I felt like it!  Tomorrow is a 1.75 mile run, which I am nervous about…I haven’t really gone that far in awhile, so I realize I may have to take a few mini walk breaks, and I’m okay with that.


It feels so good to have a plan and some structure back in my life!!!

A New Day

Thanks for all the positive feedback on my regrouping effort! I feel confident that I can do this once and for all!

Although, last night I did stray off course a little. I got home with a terrible craving for oatmeal, so that’s what I had…a big (probably too big) bowl of oats+blueberries….and a small piece of Mackinac Island Butter Pecan Fudge.

We are having some crazy storms here, so no walking outside at lunch today! Instead I ran, ok, I drove! 🙂 to Target for a few things. I put a pork loin in the crockpot this morning, so I am looking forward to dinner being ready when I get home!

On to today’s eats (all of which I have tracked in my nifty new spreadsheet!):

Breakfast was blueberry pie oats and a calcium chew


Snack was a Fuji apple with one of these new caramel dip cups (only 1 point for the whole cup!). I love caramel, but these almost have a coffee taste mixed in with the caramel…not sure I love them!



Lunch was a Morningstar Farms Veggie Burger on an Arnold Thin with chunky salsa. I also had a HUGE green pepper that I dipped in my left over salsa.


Alos, a Peanut Butter Gnu Bar. This flavor was pretty good…you could defintately taste the fruit and the peanut butter, which was a little weird, but I enjoyed it!


Snack was a Stonyfield Organic Strawberry yogurt. I usually don’t like fruit on the bottom yogurt, but this stuff is pretty good!


I also snuck an unpictured Reeses cup out of the candy jug.

Dinner tonight, as I mentioned is pork loin in the crock pot. I used this recipe, and since it’s a new recipe, I will probably have a review tomorrow!

As long as I can stay on track tonigh, I’m doing good! I have two points left after figuring my dinner of pork, a peach, and corn on the cob, so we will see what happens!

Time to Regroup

The summer is slipping away and I am frustrated. I am frustrated at myself for gaining weight instead of losing, for paying my Weight Watchers fees and not going, for not exercising like I should, and for not having any motivation.  It’s time for a mental makeover.

I debated dropping my WW membership, but I know I do good *when I go*, so I am going to go weigh in this Saturday and hopefully I will be shocked into getting back on track. I also created a spreadsheet so that I can get back to tracking points. I also put spots for water and exercise. (If you’s like to see a copy of my spreadsheet, let me know and I will send it to you!)

I have tried every possible way to track my food intake, and I am hoping this will work for me. I love some of the online tracking tools, but since we don’t have internet, I tend to slack off at night. I can do this! Why is it so hard for me to stay on track?!?!?! GRRR!

Ok, mini melt-down over. Today’s (well documented!) eats.

Breakfast was my favorite oatmeal (oats, blueberries, brown sugar, and cinnamon) along with a caramel flavored calcium chew.



I couldn’t shake my hunger so I had some pistachios (a killer for using up WW points!) ….thought I took a pic, but must be not! 

And then an Espresso Chip Gnu Bar (thanks for the samples, Robyn! Reviews coming soon!) which was a flavor I didn’t really care for, but I’m not a coffee drinker, so I kind of expected that!


Lunch was leftover white chicken chili


And some leftover roasted zucchini and mushrooms


Snack was a green pepper and a flat peach



Dinner tonight will be “use up leftovers” night. I will have more white chicken chili, an apple with caramel dip, and a fresh garden cucumber.

That should leave me with 2.5 WW points left (as long as I am not a hungry monster all afternoon!) and I may have to whip up a batch of banana softserve for dessert!

Exercise today was a 2 mile walk at lunch and hopefully a walk/jog after dinner.


Send lots of positive thinking vibes my way…I’m gonna need them!

So Sad to See it End

The past five or six days have been crazy! I definately did a lot of things (and didn’t have to go to work!!). Here’s a quick recap of where I’ve been…

Tuesday night hubby and I went to the pick-up and semi-truck pulls at the local county fair


There may have been some elephant ear eating involved….


Wednesday morning I headed to the farmer’s market bright and early and came home with some veggies and cut flowers


Then my college roomie Alicia showed up. We spent most of the day with my sisters and had dinner at my parents house. Thursday night we went to a Loons baseball game,


Friday was just another hang out day (with yummy Mexican food for lunch)and Alicia left at about 5pm. Hubby and I were both tired so we didn’t want to cook. We went out for dinner and got ice cream.

I also got a couple of great packages in the mail last week! The first one was from Larabar…They sent me a big variety box to sample…there is at least a dozen different flavors in there!!! I have never tried these (not available in stores around here!) so I am really excited!


I also got a great package from Rebecca Buckley at Bondi Band. She sent me 4(!!!) of their headbands to try. I need to get out for a run so I can give them a try! Thanks Rebecca!!


Saturday we went to my sister-in-law’s wedding reception (they got married at the courthouse a month and a half ago…)


I also got to hang out with my baby sister and her new boyfriend (which is hubby’s cousin!) before they headed to a Detroit Tigers game.


Yesterday, hubby and I went down to Lansing for a little shopping. I got a Livestrong hoodie that I am excited to where while running!


Whew. I feel like I have been on the go all week! Crazy! Hopefully I can get back to regular blogging tomorrow. Today I am digging through my emails at work and also going through over 400(!!!) google reader posts! Have a great Monday!!!
